Beef with Black Bean Sauce
When the winds outside are howling, sending whirls of snow across the land in a complete whiteout, the days are so dark and gloomy that you wonder if the sun has left and is never going to come back, and it’s so cold that you have icicles hanging off your nose, you know it’s time for some comfort food!
When we think of American comfort foods, pot roast, meatloaf, and chicken pot pie come to mind.
But Asian food? Absolutely. I have a folder dedicated to Asian comfort food, and this dish fits the bill. It warms you from the inside and makes you happy. The same basic ingredients as pot roast are all here: beef, veggies, gravy, and a starch.
I know that I’ve said that I love “the more complicated the better “ recipes, but every once in a while, I too, need something simple. Pot roast takes very little prep time, and to cook, you put it in the oven and wait until it is done. Unfortunately, the time it takes to make it isn’t always practical. That’s what makes this dish so great: you will have it on the table in a much, much shorter timeframe than the pot roast.
With all that extra time saved, and while the winds are still roaring and snow is coming down ten feet per hour, you’ll cuddle up, wrap yourself in a blanket in front of a roaring fire, and with a pleasantly full belly, end your day relaxed and with a huge smile on your face.
