Khao Soi
How exactly I came upon the recipe for Khao Soi, I’m not entirely sure, but what enticed me was that it called for homemade curry. It was something that I had always wanted to make. I had all of the ingredients on hand and, believe it or not, a little extra time.
There are many great things about this dish. The homemade curry is so much better than store-bought. The long simmering time for the chicken makes it fall-off-the-bone tender. And the pure fun of watching the wonton noodles puff up and fry in the wok kind of makes me feel like a kid again.
The bonus of making this recipe? It made Doug a fan of chicken legs. He never liked them until this dish. They are so succulent that all you can say as you unabashedly gnaw away at them while slurping a little of the silky broth with egg noodles, is a soft and approving, “mmmmmm”, and nothing else. Yes, it’s that good.
