Longevity Noodles

One of the customary foods to make for Lunar New Year celebrations is Longevity Noodles. Hailing from the Han Dynasty, and as the name suggests, it’s a noodle dish that symbolizes long life, prosperity, health, and good luck. It’s important to avoid breaking or cutting the noodles, as that may shorten life, bring misfortune, or disrupt harmony.


If you do not plan to plate up longevity noodles, no need to worry. As long as the noodles that you serve are long and still fully intact, peace and harmony will be yours. 


To represent my symbol of longevity, I made Laksa, a soup served with long rice vermicelli noodles.


My recipe is a combination of a few recipes. I sometimes make the Laksa paste from scratch, but at other times, I have a jar in my pantry. I might add fish balls or sugar snap peas. At other times, scallops with baby bok choy. If you can, absolutely make fried shallots to sprinkle on top. Please, make them. They are that good.
