Thai Boat Noodles



Today is the Lunar New Year Lantern Festival and the last day of the New Year festivities. There are huge celebrations filled with the release of lanterns, fireworks, and food. 

I am celebrating by making Thai Boat Noodles. This soup is gorgeous and deeply satisfying in both flavor and mouthfeel. My favorite ingredient? The meatballs: bursting with flavor, they have a sausage-like texture that is delightfully airy and tender. They are what make the dish.


I’ve mentioned before how I love trying new recipes, and the more difficult they are, the better. I have to confess that every time I make this recipe, I panic a little and admit to myself (once again) that at times, I can really go overboard… 

“Picture it!’ (Using my best “Sophia Petrillo from the Golden Girls” voice.)

“Sister Bay. 2025. You’re spying on Bonnie through her kitchen windows. You see the blur of a mad woman running around, muttering to herself as food flies everywhere, steam rolling out of a conglomerate of pots on the stove, and a deeply worried husband looking on.” 

“She serves a beautifully presented bowl of Thai Boat Noodles. The kitchen looks like a tornado hit. Her husband looks even more worried, but as soon as he takes his first bite, a smile takes over his face.” 


“Ma, what’s the point?” (Said in a “Dorothy Zbornak” voice.)


Sophia continues, “The bigger the mess, the better the meal. That, pussycat, is called good chaos.”

So, share in my madness. Don’t worry about the mess, take the extra time to make the broth and the meatballs, and enjoy your bowl of good chaos.
